Four techniques worth more than four hundred recipes
Recipes tell you what to do. Technique tells you why, which is what lets you cook without one. These four cover most of the gap between following instructions and actually cooking.
Salt early, not at the table
Salt on the surface at the end tastes like salt. Salt applied ahead has time to move into the food, and it changes the protein structure as it goes — which is why dry-brined chicken holds moisture better than the same bird salted as it hits the pan.
For meat, salt at least 40 minutes ahead or the night before. Under 40 minutes the salt has drawn moisture to the surface but not yet been reabsorbed, which is the worst moment to cook.
Browning is a chemical reaction with requirements
The Maillard reaction between amino acids and sugars is what makes roasted, seared and baked things taste roasted, seared and baked. It needs heat above roughly 140°C and, critically, a dry surface.
Water boiling off a wet surface holds the food at 100°C — too cool for browning. This is the entire reason for patting meat dry, not crowding the pan, and getting it properly hot before anything goes in. A crowded pan steams; a hot empty one sears.
An emulsion is two things that should not mix, held together
Mayonnaise, vinaigrette, hollandaise and a pan sauce finished with butter are all the same trick: fat suspended in water, or the reverse, stabilised by an emulsifier. Egg yolk and mustard both work because they have molecules with a water-loving end and a fat-loving end.
Emulsions break when you add fat faster than it can disperse, or when the temperature swings. A broken sauce is usually rescuable — start again with a fresh yolk or a spoonful of water and whisk the broken mixture into it slowly.
Resting is not optional
Cut a steak straight off the heat and the juices run out onto the board, because the muscle fibres are still contracted and the internal pressure is high. Give it five to ten minutes and the same steak keeps most of that liquid.
The same logic applies to bread — cutting a hot loaf tears the crumb because the starch has not finished setting.
